Tomato Orzo (small pieces of pasta, shaped like grains of barley or rice)
Soup Ingredients
3 tablespoons of olive oil
2 green peppers
1 red pepper
1 carrot
1 tablespoon of tomato paste
2 tomatoes
Salt
Black pepper
2 handfuls of orzo
5 cups of water
1 handful of parsley
Follow preparation of the soup.
Place the pot on the stove and add the olive oil and heat.
Add the diced peppers and sauté.
Add the grated carrots and continue sautéing.
Add the tomato paste and diced tomatoes and mix.
Add salt, pepper and orzo and mix.
Add the water, mix and let it boil for 15 minutes.
Then reduce the heat and cook until the orzo is soft.
Once the soup is cooked, remove it from the stove.
Add the finely chopped parsley and mix.
You can serve it hot with lemon if you wish.
