1 cup Sugar
1/4 cup mixed dry fruits (almonds and pistachios are best)
12-15 cashew nuts (soaked)

How to Make Gulab Kulfi
Cook 1 liter full cream milk in a pan until it boils. On the other hand, prepare a paste of soaked cashew nuts.
After boiling, reduce the heat and add cashew paste to it while stirring continuously. Remember that the milk should not stick to the pan.
Cook this mixture for 10 minutes. At this stage, add finely chopped almonds and pistachios and cook for a few seconds. After a while, add sugar to the mixture as per taste.
Cook the mixture while stirring continuously so that the sugar dissolves completely. After a while, the mixture will start thickening. When the mixture is cooked and reduced to half, turn off the heat. Keep the pan aside and let it cool completely.
When the mixture cools down, add vanillin essence. If you want, you can also add a drop of pink food coloring at this stage.
Now fill the mixture in the molds and pack it well and can give shape as you want, then keep it in the freezer for 7 to 8 hours. When the kulfi is well frozen, decorate it as you wish. Finally enjoy a delicious kulfi.
