To prepare it, you need fresh tarragon (estragon) – 50-70 g (large bunch), water – 1 liter (for syrup) + 1-1.5 liters (for dilution), sugar – 150-250 g (adjust to taste, you can use less), lemons – 1-2 pcs., ice – for serving, optional: fresh berries, lime or lemon slices for decoration .

Preparation:

Wash the tarragon thoroughly. Separate the leaves from the stems. Pour 1 liter of water into a saucepan, add sugar and bring to a boil, stirring until completely dissolved, prepare the syrup. Remove from heat. Add the remaining tarragon (leaves and stems) to the hot syrup. Stir, cover and leave to infuse at room temperature for 30-60 minutes (for a richer taste, you can leave it longer). Strain the syrup through a sieve, squeeze well. Cool the syrup in the freezer.

Pour the cooled tarragon syrup into a jug. Add freshly squeezed juice of 1-2 lemons (to taste). Dilute with cold water (1-1.5 liters or more, depending on the desired intensity).

Add more sugar or lemon juice if needed. Serve the drink over ice, garnished with fresh tarragon leaves, lemon or lime wedges, and berries. Enjoy natural and refreshing homemade tarragon!
